Makes two 9-inch pies
Crust:
3 cups flour
1 1/4 cup Crisco
1 teaspoon salt
1 egg
1 tablespoon vinegar
5 tablespoons water
For the crust, mix flour, Crisco, and salt and blend well. Beat together egg, vinegar, and water, adding a little at a time. Mix till dough gets smooth. Roll out on a floured surface and place in two 9-inch pie pans.
Filling:
3 cups baked sweet potatoes,
mashed and at room temperature
2 cups condensed evaporated milk
4 eggs
2 1/4 cups sugar
2 teaspoons vanilla
1/4 teaspoon baking powder
For the filling, combine sweet potatoes, milk (reserve 1 tablespoon), and eggs. Add sugar gradually, tasting as you go. (Potatoes might be very sweet and may require less sugar.) Beat at high speed. Add vanilla. Mix baking powder with remaining tablespoon of milk and add to potato mixture.
Bake at 375 degrees for 1 hour. Check after 40 minutes by inserting a knife in the middle. If it comes out clean, it’s done.
