
Serves four
8 strips of bacon
4 eggs
4 Kaiser rolls, cut in half
4 tablespoons soft butter
4 pieces of cheese, any kind
4 tablespoons barbecue sauce (avoid the smoke-flavored variety)
1 medium carrot, peeled and grated on a cheese grater
1 small cucumber, thinly sliced
1 small can sliced pickled beets
1⁄2 small red onion, thinly shaved
1 large tomato, thinly sliced
4 pieces of red leaf lettuce, washed
salt and pepper
Cook the bacon until crispy. Fry the eggs, breaking the yolks so the sandwich isn’t a mess to eat. Season the eggs with salt and pepper. Butter each side of the roll, then toast in a hot non-stick pan until golden brown. Stack the sandwich in this order: egg, cheese, bacon, barbecue sauce, carrot, cucumber, beets, onion, tomato, and lettuce.
