Although you can always put cheese on top of your hamburgers, finding it inside the burger is a nice surprise. This recipe works best with the softer cheeses listed below.
2 pounds ground beef
1 tablespoon red wine vinegar
1 teaspoon dill
3/4 cup chopped onion
salt and pepper to taste
8 ounces soft cheese like gorgonzola or fresh or smoked mozzarella
Gently mix ground beef with vinegar, dill, onion and salt and pepper. Shape beef mixture into 8 thick patties. Make a pocket in each patty, fill with cheese, and cover the cheese with meat. Grill to desired doneness. Serves 8.
