The best part of any meal is dessert, and though I don’t care for peanut butter on a sandwich, it’s pretty nice in these cookies, adapted from “365 Great Chocolate Desserts.” The recipe calls for milk chocolate chips, and I like how they complement the salty peanut butter, but if your preference is for semi-sweet, by all means, go ahead.
1/2 cup chunky peanut butter
1/2 cup (1 stick) butter, softened
3/4 cup brown sugar
1/2 cup granulated sugar
2 teaspoons vanilla
1 egg
1 1/2 cups flour
1 teaspoon baking soda
1 cup milk chocolate chips
Preheat oven to 350 degrees. In a medium bowl, with an electric mixer, beat peanut butter, butter and sugars until light and fluffy, about 3 minutes. Add vanilla and egg; beat until well blended. Add flour and baking soda; mix well. Stir in chocolate chips.
Drop dough by heaping teaspoons, 1-inch apart, onto lightly greased baking sheets. Flatten cookies slightly. Bake 10 to 12 minutes or until golden. Let cookies cool 5 minutes on baking sheets before removing to wire racks to cool completely. Makes 3 dozen cookies.
