We have a house in Bethany where we usually entertain family and friends. Most weekends I have between 10 and 15 people. My husband (Leon Kaplan Sr., executive vice president for CareFirst) does the grilling. I try to have everything else made ahead of time. This is one of my summer favorites. For the Fourth of July, I use dried or fresh blueberries instead of raisins and leave out the parsley.
4 cups cooked rice
1 red pepper chopped
4 tablespoons golden raisins
4 tablespoons chopped parsley
4 tablespoons chopped onion
Dressing
1 cup olive oil
1/3 cup red wine vinegar
1 tablespoon lemon juice
1 clove garlic, minced
1 tablespoon sugar
1 teaspoon curry
Mix dressing. Mix salad ingredients. Combine. Chill 4 to 6 hours for best flavor. Take out of refrigerator about 30 minutes before serving.
