This simple salad makes the most of fresh, flavorful ingredients — tender beans, fresh herbs and good olive oil. Experiment with different vinegars and herbs as the summer progresses. I found this recipe in Gourmet.
2 pounds green beans, washed, drained and trimmed
2 tablespoons apple cider vinegar
1/3 cup good olive oil
2 teaspoons dill seeds
1/4 cup chopped fresh dill, plus extra for garnish
Salt and freshly ground black pepper to taste
In a steamer set over boiling water, steam the beans, covered, for 6 to 8 minutes, or until they are just tender. In a small bowl, whisk together the vinegar, oil, dill seeds, chopped dill and salt and pepper. Transfer beans to a serving bowl and toss with the dressing. Serve warm, cold or at room temperature. Serves 6.
