1 1/2 pounds salmon, skinned and boned
1/3 cup bread crumbs
1/4 cup celery, minced
1 large egg
2 sprigs fresh tarragon, clipped
salt and pepper
6 large leaves of lettuce
wasabi mayonnaise
Gently cut salmon into quarter-inch chunks. In a bowl, combine the salmon, bread crumbs, celery, egg, tarragon, salt and pepper. Form into patties. Sauté or broil for 8 minutes. If the patties seem fragile, do not turn over. Top with a fresh sprig of tarragon. Serve on a leaf of lettuce with this spicy wasabi mayonnaise (recipe follows) and sliced cucumbers. Buns seem unnecessary.
