Serves four
8 thin slices cured ham
8 rounds bread (your choice)
8 eggs
butter as needed
salt and freshly ground pepper
Wipe the inside of an 8-hole muffin tin with softened butter and place a slice of ham in each one. Toast 8 slices of bread, and butter each side. Using circle cutters, find the circle that fits the bottom of the muffin tin. Cut a circle of toast and place on top of the ham. Crack an egg over each piece of toast and season with salt and freshly ground pepper. Bake in a preheated 350-degree oven until the eggs are set but the yolk is still runny. Pop out of the tin and serve; two per person.
