A lot of people think you need to put ham hocks in greens, but you don’t. The key is in the seasoning.
5 pounds fresh collard greens
1 medium onion, chopped
1/4 cup vegetable oil
1/8 teaspoon crushed red pepper
1/2 pound smoked turkey wings or necks
1/8 teaspoon Accent seasoning
salt and pepper to taste
Wash greens thoroughly, making sure all the grit is gone.
Cut into 1/2-inch pieces. In a large pot, combine all ingredients and fill halfway with water. Bring to a boil over high heat and reduce to a simmer. Cook for 1 1/2 hours on low heat. Remove turkey bones, if desired. Serves 4 to 6.
