As in matching wine with food, marinades have to match up as well. A delicately flavored fish wants a subtle marinade. A big flavored catch can take a more outspoken marinade. This recipe from Livolsi packs a punch, so if you’re serving a mild fish, don’t overdo the marinating time. Also, you may want to use thicker fillets to work with the bigger taste of the marinade.
1 mango, skinned, seeded and pureed
1 cup corn oil
1/2 cup lime juice
2 garlic cloves, minced
1 tablespoon chipotle pepper, ground
1 teaspoon paprika (or cayenne for more heat)
1/2 teaspoon cumin
1 bunch cilantro
1 teaspoon sea salt
Assemble all ingredients in a large bowl and stir well. Marinate mild flavored fish for no more than 15 minutes. Stronger flavored fish can take up to 60 minutes, depending on your taste.
